Easy Kerelan Curry

When time is very short, this a mild and tasty curry the whole family can enjoy. It can be made using any meat or seafood.

Mistress of Spice Kerelan curry powder

500g preferred meat

500ml fresh or canned coconut milk

3 tsp grated ginger

3 tsp grated, minced garlic

2 onions finely chopped

3 red or green chillies, optional

Heat oil in a pan and sauté onions until soft, add garlic and ginger and fry for a couple of minutes longer. Add the Mistress of Spice Kerelan curry powder and heat until fragrant.

Then add the meat. Cook until done. (If using seafood it is better to only half cook, otherwise it ends up overdone at the end of simmering.)

Pour in the coconut milk, add chillies, if using, and simmer on low heat until sauce is thicker, like a cream.
