Roast Onion, Macadamia and Honey Dip with Ras el Hanout

5 onions small to medium

2-3 tbsp Mistress of Spice Ras el Hanout

1 cup macadamia nuts

1-2 tbsp honey

Peel and halve onions and place in an oven tray. Drizzle with the oil and sprinkle with the Mistress of Spice Ras el Hanout. Toss to get them all coated. Put in the oven and roast onions at 180oC until soft and brown in colour.

Scrape onions and spiced oil from the tray into a food processor or blender add the macadamia nuts and honey. (Start with one tbsp of honey and add more if you need it, some onions are sweeter than others.) Blitz until smoothish paste. You can add water to get a thinner consistency if desired.

Check seasoning, add salt if required.

Serve with toasted lavosh bread or your favourite savoury biscuits.
